Sacré Sour

It’s September, and I’m late on my drink of the month, but better late than never! Early fall says “coffee” to me. (Truth be told a lot of things say coffee to me, I’m a highly caffeinated person).

Sacré is a fairly new non-alcoholic spirit, made from fermented maple syrup and coffee. It’s a bold flavor, and calls for other bold flavors to support it. I used it to mix up this zero-proof version of a whiskey sour.

  • 1 1/2 oz Sacré
  • 1/2 oz black tea syrup
  • 1 oz lemon juice
  • 2 dashes of pimento bitters
  • 2 1/2 T aquafaba

Combine all ingredients in a cocktail shaker. Dry shake. Add ice. Shake again. Strain into a lowball glass.

I had the black-tea syrup on hand when I made this, but you can use plain simple syrup just as well. The allspice flavor from the pimento bitters is important, so if you don’t want the tiny amount of alcohol that comes with traditional bitters, you can grate allspice over the finished drink, or infuse your simple syrup with it.
