Light, summery, icy, tastes like vacation.

• 2 oz lime juice
• 1 1/2 oz coconut cream
• 1 oz water
• 2 dashes pimento bitters

Combine all ingredients in a cocktail shaker with a lot of ice. Shake (give this one extra shake time). Strain into a double rocks glass filled with crushed ice.

This is another recipe test from the WaPo article I mentioned a few days ago. I did not have Coco Real on hand and instead used @coco.lopez.usa Cream of Coconut. I had to add proportionally more coconut cream than in the original recipe and add a small amount of water to temper the acidity of the lime. In my test I used Dale DeGroff’s Pimento Bitters, which will add a tiny amount of alcohol to the drink. It’s still under .5% ABV, so legally ‘non-alcoholic.’ However, if this is not your jam, you can use @dramapothecary glycerine-based bitters (their Hair of the Dog bitters would probably be the best match), or dust the finished drink with allspice.
